Thanks for tackling this, I have looked a little bit and found some minor issues in the generated documentation.

e.g. for certtool EXAMPLES and FILES do not end up in the generated manpage

p11tool.1 listed many option conflicts, all but the first one seem to have been lost in conversion:

        --export               Export the object specified by the URL
-                                - prohibits these options:
-                                export-stapled
-                                export-chain
-                                export-pubkey
+                                - prohibits the option 'export-pubkey'

Deprecation warnings have been removed, e.g in certtool.1:
~~~diff
-       --rsa  Generate RSA key.
+       --rsa
+
+              Generate RSA key.
 
               When combined with --generate-privkey generates an RSA private
               key.
 
-              NOTE: THIS OPTION IS DEPRECATED
