I wouldn't recommend that, unless it's only for a temporary transition period. IMHO if gnutls decide to add meson build system, it should be with the goal of dropping autotools. This is how we proceeded in glib.

As long as you have python 3.5 (that's 4 years old, arguably still "new" I guess...), you can easily install latest meson with pip3. There are no other dependency.
