I know next to nothing about Windows.
In Linux (and probably any other UNIX system),

In the Linux case, I can run:
$ echo SOME DATA HERE | gpg -e -r jdbeyer >gpg.out
and produce an output file that can be decrypted to produce the original.
Surely that would have fit a pipe, so nothing need be written out to disk.
